About Me

For nearly 20 years, I navigated a stable career in healthcare policy, but despite my accomplishments and a loving family, I felt unfulfilled. Life had become a series of days to get through, and I realized that my core values of health, connection, and purpose weren’t reflected in my daily routine.

The first step was getting sober, the biggest barrier to my living authentically. Only then was I able to focus on my health and well-being, embracing a sense of freedom and vitality within my body.

In search of clarity, my husband and I took a bold step and moved our family to Granada, Spain, for a year.  We wanted to escape the daily grind, reconnect as a family, and immerse our daughters in a rich cultural experience.  That year of reflection was transformative.

In the beauty of Spain, I found balance in nature.  I had previously considered myself a ‘sometimes vegetarian’ who ate meat occasionally.  However, as I aligned my food choices with my values of health, environmental, and animal welfare, I discovered the remarkable health benefits of plant-based eating - like lower blood pressure, weight management, and improved heart health.

This journey reignited my passion for food—not just in eating it but in creating nourishing meals.  A friend’s suggestion to pursue my love of cooking sparked an idea: why not share my passion for plant-based cooking with others?

Upon returning to Minnesota, I dove into teaching plant-based cooking classes, and I found my calling. My mission is to introduce plant-based living in an accessible, nonjudgmental way. I understand how overwhelming healthy eating can be; my approach is to meet you where you are, making cooking joyful and stress-free.
